I have an older edition of the Official Encyclopedia of Bridge and there's an article "Dummy's First Trick Play", focusing on plays with doubleton honors.
It gives a rule attributed to someone named M. D. Macdonald: play low if the opponents have two "significant" honors, otherwise play high.
For example, play low from Qx with ATx in declarer's hand (K-J are significant honors); play high with Txx in declarer's hand (A-K-J are significant honors).
It also lists some obvious and less-obvious exceptions.
Does anyone know of a standard source that covers this kind of situation in more detail?
