Today my friends and I had only 6 people for our regular team game. We tried to set up with 3 human pairs and a robot pair.
Unfortunately, people who had not been invited came and replaced the robots. They were either asked to leave or left of their own volition (I am not sure as I was at the other table). Now the entire table closed down.
So my question is, how do you set up a team match with 6 players and two bots without being disturbed?

As far as I am aware, you cannot use robots in a team match.
When a team match is started with three pairs, two seats are freely available which is why people ask to play. In this setting people can only ask to play and they will only sit at a table if the host allows them. As an aside, if you wanted to start one table when waiting for a known fourth pair, put "+private+" in the match description and no-one will be able to see the match and ask to play, but the host will then need to invite the other two when they arrive.
I suspect the host cancelled the match when they could not discover how to put robots into the free seats, which is why your table closed.

Or two of the people withdrew without being replaced, that automatically closes the match.
