Partner deals and red vs white opens 1NT. RHO bids 2 which shows clubs and another, you double (Stayman, you don't know what else to do), partner bids 2 and RHO bids 2. You bid 3 and partner replies 3NT and RHO once again enters the bidding, this time with 4, what's your call? How do you handle this situation?

Also, he rates to not have a heart void when he leads the 3.

Besides playing for fun, most people also like to play bridge to win

If double is Stayman, then I bid whatever I would do if RHO had passed to show this hand. If that involves bidding 2NT as a transfer to diamonds, then I bid that then 3NT, which hopefully should show a hand like this (a hand with long diamonds that wants to play 3NT).

I'm not sure what I do now. If my 3D on the second round shows a game forcing hand, then I pass and await developments. I don't know whether or not to bid 4NT, 5D or to double 4C. Hopefully partner does.

Presumably pass is forcing so playing standard methods this hand is suitable for that. If p bids 4 I pass. But he will probably double or bid 3NT.
The world would be such a happy place, if only everyone played Acol :) --- TramTicket

A quick question - how would you have bid this hand if RHO had not overcalled?

Its unfortunate you started off with the left foot doubling as stayman. Now that you have reached this spot I think just bidding 4N to play is sensible.

I would probably double, though maybe I should pass -- I don't want to play in a 10-trick NT contract. We may have 10, we may have 7, depending on partner's exact black suit holding. I'd actually love it if p can double them at the 4 level.
There is a big difference between a good decision and a good result. Let's keep our posts about good decisions rather than "gotcha" results!
