What to do after they overcall over our 1NT ?

At any form of scoring I'd pass and wait for partner to make a takeout double. If he makes one, I take it out; if he doesn't, maybe defending 2 will be OK. I expect partner to double with any 2(434) except a minimum with spade wastage, but that style may not be universal).

A problem with this approach is that partner may not act with a 2(335) shape, fearing a matching 3(442).

With J as well, I'd still pass at matchpoints. At IMPs, assuming 1NT is really 15-17, I'd bid 3NT.
... that would still not be conclusive proof, before someone wants to explain that to me as well as if I was a 5 year-old. - gwnn

Not quite so old guy answer - double is TO and I don't relish putting this hand down in 3 or 3.

I dble = any game try - or a hand I don't know what to do on lol (plus I play Lebensohl). Nothing is perfect but I prefer to eliminate as many guessing situations as possible. John Armstrong used to say, get your own hands sorted out first and use anything left to try and get a penalty - but there's usually not much left lol.

Passing with the jack of diamonds also seems pretty absurd at all white MP. I guess you are gambling that people will go down in 3N and you will go plus in whatever but it seems like a big view. It probably depends on who RHO is a lot.

All in all, 3NT seems more likely to go down than to make. That would make pass a good bet rather than a gamble.
